How to Make Mango Spread
- Preheat your oven to 100°C (212°F).
- Place 500g of mango pulp and juices into a large saucepan over low heat. Simmer gently for 10-15 minutes, or until most of the liquid has evaporated. Stir occasionally to prevent sticking.
- While the mango simmers, spread 200g of granulated sugar evenly on a large baking tray. Place in the preheated oven for 5 minutes to warm gently.
- Carefully remove the warmed sugar from the oven. Let it cool slightly.
- Blend or sieve the cooked mango mixture until smooth. Return it to the saucepan.
- Add the warmed sugar to the mango puree and stir gently until fully dissolved.
- Increase the heat to medium-low. Cook, stirring frequently to prevent burning, for 20-30 minutes, or until the mixture has thickened considerably and coats the back of a spoon.
- Remove from heat and let the mixture cool slightly.
- Spoon the mango spread into clean, sterilized jars, leaving a small headspace.
- Seal the jars tightly.
