How to Make Mango Spread

  1. Preheat your oven to 100°C (212°F).
  2. Place 500g of mango pulp and juices into a large saucepan over low heat. Simmer gently for 10-15 minutes, or until most of the liquid has evaporated. Stir occasionally to prevent sticking.
  3. While the mango simmers, spread 200g of granulated sugar evenly on a large baking tray. Place in the preheated oven for 5 minutes to warm gently.
  4. Carefully remove the warmed sugar from the oven. Let it cool slightly.

  6. Add the warmed sugar to the mango puree and stir gently until fully dissolved.
  7. Increase the heat to medium-low. Cook, stirring frequently to prevent burning, for 20-30 minutes, or until the mixture has thickened considerably and coats the back of a spoon.
  8. Remove from heat and let the mixture cool slightly.
  9. Spoon the mango spread into clean, sterilized jars, leaving a small headspace.
  10. Seal the jars tightly.
  11. Once completely cooled, store the mango spread in the refrigerator for up to 3 weeks. Enjoy!
