How to Make Meatless Taco Rice

  1. In a large pot or Dutch oven, combine the diced tomatoes (undrained), chopped onion, minced garlic, taco seasoning, cumin, chili powder, oregano, vegetable broth, rinsed and drained pinto beans, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Stir in the rice.
  4. Once the mixture returns to a boil, reduce the heat to low, cover, and simmer for 45-50 minutes, or until the rice is cooked through and most of the liquid is absorbed. Stir halfway through.
  5. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork and serving. Garnish as desired (salsa, avocado, shredded cheese, etc.)
