How to Make Meatless Taco Rice
- In a large pot or Dutch oven, combine the diced tomatoes (undrained), chopped onion, minced garlic, taco seasoning, cumin, chili powder, oregano, vegetable broth, rinsed and drained pinto beans, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Stir in the rice.
- Once the mixture returns to a boil, reduce the heat to low, cover, and simmer for 45-50 minutes, or until the rice is cooked through and most of the liquid is absorbed. Stir halfway through.
- Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork and serving. Garnish as desired (salsa, avocado, shredded cheese, etc.)
