How to Make Millionaire Shortbread

  1. Preheat oven to 160°C (325°F). Line a baking tin (approximately 20x20cm) with parchment paper.
  2. In a large bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Gradually add the flour and pinch of salt, mixing until a dough forms. Do not overmix.
  4. Press the dough evenly into the prepared baking tin. Prick the base all over with a fork.
  5. Bake for 20-25 minutes, or until the edges are lightly golden.
  6. Remove from the oven and let cool completely in the tin.
  7. Once cooled, spread the caramel evenly over the shortbread base.
  8. Melt the milk chocolate gently, either in a double boiler or in short bursts in the microwave, stirring until smooth.
  9. Pour the melted chocolate over the caramel layer and spread evenly.
  10. Refrigerate for at least 30 minutes to allow the chocolate to set completely.
  11. Cut into squares and serve. Enjoy!
