How to Make Mincemeat Pie Diabetic

  1. Prepare a 9-inch pie crust (store-bought or homemade) and chill. Do not bake.
  2. Place 1 lb lean stew beef in a covered saucepan and cover with 2 cups of water.
  3. Bring to a medium heat and cook for 1 hour, or until the beef is very tender. Skim off any excess fat.
  4. Drain the beef thoroughly, reserving about ½ cup of the cooking liquid.
  5. Core and slice 2 large apples (about 1 lb).
