How to Make Molasses Pie

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine 2 ½ cups all-purpose flour, ½ teaspoon salt, 1 cup (2 sticks) unsalted butter (cold and cut into cubes), and ½ cup granulated sugar. Using a pastry blender or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  3. In a small bowl, whisk together 1 teaspoon baking soda and 2 tablespoons warm water. Let sit for 1 minute.
  4. In a separate bowl, whisk together 1 cup molasses, 1 large egg, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, and ½ teaspoon ground ginger.
  5. Add the baking soda mixture to the wet ingredients and whisk until well combined.
  6. Divide the crumbly crust mixture in half. Press half into the bottom of a 9-inch deep-dish pie plate.
  7. Pour the molasses mixture evenly over the crust.
  8. Crumble the remaining crust mixture over the top of the filling.
  9. Place the pie on the lowest rack of the oven and bake for 45-50 minutes, or until a knife inserted into the center comes out clean. If the crust starts to brown too quickly, cover the edges loosely with foil.
  10. Let the pie cool completely on a wire rack before slicing and serving.
