How to Make Molasses Oat Bran Cookies

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together 1/2 cup vegetable oil, 1 large egg (or 1 flax egg for vegan option), 1 cup granulated sugar (or 1 cup raw sugar), and 1/2 cup molasses until well combined.
  3. In a separate medium bowl, whisk together 2 1/2 cups all-purpose flour, 1 1/2 cups rolled oats, 1/2 cup oat bran, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon salt, and 1/4 teaspoon ground cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Cover the bowl and refrigerate the dough for at least 1 hour (or up to 24 hours).
  6. In a small bowl, set aside 1/4 cup granulated sugar (or raw sugar) for rolling.
  7. Roll rounded tablespoons of dough into 1-inch balls. Roll each ball in the reserved sugar.
  8. Place the sugared dough balls 2 inches apart onto the prepared baking sheets. Gently flatten each cookie with the bottom of a sugar-dipped glass.
  9. Bake for 7-10 minutes, or until the edges are set and the tops are crackly.
  10. Let the cookies cool on the baking sheets for 1 minute before transferring them to a wire rack to cool completely.
