How to Make Oatmeal Carmelitas

  1. Preheat oven to 350°F (175°C). Grease a 13x9 inch baking pan.
  2. In a large bowl, combine 1 ½ cups flour, ½ cup rolled oats, ½ cup brown sugar, ½ teaspoon baking soda, and ½ teaspoon salt. Cut in ½ cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture (about 3 cups) into the bottom of the prepared pan.
  4. Set aside the remaining crumb mixture for topping.
  5. Bake the crust for 10 minutes.
  6. Meanwhile, in a medium saucepan, combine 1 (14 ounce) can sweetened condensed milk, 6 tablespoons butter, ½ cup brown sugar, and 3 tablespoons flour. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens slightly (about 5 minutes). Remove from heat and stir in 1 teaspoon vanilla extract.
  7. Remove the crust from the oven. Sprinkle evenly with 1 cup chocolate chips and ½ cup chopped nuts.
  8. Drizzle the warm caramel mixture evenly over the chocolate and nuts.
  9. Sprinkle with the reserved crumb mixture.
  10. Return to the oven and bake for 18-22 minutes, or until golden brown and the filling is set.
  11. Let cool completely in the pan.
  12. Refrigerate for 1-2 hours, or until the filling is firm.
  13. Cut into bars and enjoy!
