How to Make Old Fashioned Gingerbread Loaf

  1. Preheat oven to 180°C (350°F).
  2. Grease and flour a 25cm x 11cm loaf tin, or line with baking paper.
  3. In a medium saucepan over low heat, gently melt 125g (1/2 cup) unsalted butter and 125ml (1/2 cup) golden syrup. Set aside to cool slightly.
  4. In a large bowl, cream together 2 large eggs and 200g (1 1/2 cups) brown sugar until light and fluffy.
  5. Add the cooled melted butter and golden syrup mixture to the creamed eggs and sugar. Mix well.
  6. In a separate bowl, whisk together 250g (2 cups) all-purpose flour, 2 tsp ground ginger, 1 tsp ground cinnamon, 1 tsp ground cloves, 1 tsp baking soda, and a pinch of salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. In a small bowl, whisk together 1 tsp baking soda and 60ml (1/4 cup) milk. Gradually stir this into the batter.
  9. The batter will be quite runny. Pour into the prepared loaf tin.
  10. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean. Start checking at 45 minutes.
  11. Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
