  • 2 medium apples (peeled, cored, and chopped)
  • Lemon, Juice Of
  • 50g (1/4 cup) unsalted butter
  • Brown Sugar
  • Golden Syrup
  • Porridge Oats
  • Ground Cinnamon
  • a pinch of salt

How to Make Apple Flapjacks

  1. Preheat oven to 190°C (375°F).
  2. In a small saucepan, combine 2 medium apples (peeled, cored, and chopped), 1 tablespoon lemon juice, and 2 tablespoons water.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes, or until apples are soft. Mash with a fork until smooth.
  4. In a separate saucepan, melt 50g (1/4 cup) unsalted butter over low heat. Stir in 50g (1/4 cup) brown sugar and 2 tablespoons golden syrup. Do not boil.
  5. Remove from heat and stir in 150g (1 1/2 cups) rolled oats, 1 teaspoon ground cinnamon, and a pinch of salt.
  6. Press half of the oat mixture into an 8-inch (20cm) square baking tin.
  7. Spread the mashed apple mixture evenly over the oat base.
  8. Top with the remaining oat mixture, pressing gently to compact.
  9. Bake for 25-30 minutes, or until golden brown and cooked through.
  10. Let cool completely in the tin before cutting into squares.
