How to Make Old Reliable French Bread For Kitchen Aid Mixers

  1. In the KitchenAid mixer bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes until foamy.
  2. Add the salt and olive oil to the yeast mixture.
  3. Gradually add the flour, mixing with the dough hook attachment until a shaggy dough forms.
  4. Knead the dough with the dough hook for 8-10 minutes, until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  6. Punch down the dough and divide it in half.
  7. Shape each half into a loaf and place them in greased 9x5 inch loaf pans.
  8. Cover the loaves and let rise for another 30-45 minutes, until almost doubled.
  9. Preheat oven to 400°F (200°C).
  10. With a very sharp knife, make several diagonal slashes across the top of each loaf.
  11. Bake for 30-35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
  12. Remove from pans and let cool completely on a wire rack before slicing and serving.
