How to Make One Pot Cake

  1. Place 1 cup raisins in a large pot and add 2 cups boiling water.
  2. Bring to a boil and simmer for 10 minutes.
  3. Do not drain the water. Let the mixture cool completely.
  4. Add 1 cup (2 sticks) margarine to the raisin mixture. Stir until melted and combined. Let the mixture cool completely before proceeding.
  5. Add 2 cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon salt, 1 ¾ cups granulated sugar, 1 teaspoon ground cinnamon, ½ teaspoon ground cloves, ½ teaspoon ground nutmeg, and ¼ teaspoon ground allspice to the cooled raisin and margarine mixture.
  6. Stir until just combined. Do not overmix.
  7. Pour batter into a greased and floured 8x8 inch square baking pan.
  8. Bake in a preheated 350°F (175°C) oven for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
