How to Make Orange Kissed Turnip Custards

  1. Preheat oven to 350°F (175°C). Coat four 3/4-cup ovenproof custard cups with non-stick spray.
  2. Peel and segment the oranges, reserving 1/2 cup of the juice. Set segments aside.
  3. In a medium non-stick saucepan, combine the reserved orange juice, vegetable stock, soy sauce, brown sugar, and grated ginger.
  4. Bring the mixture to a boil over medium-high heat.
  5. Add the diced turnips, cover, reduce heat to medium, and simmer for 15 minutes, or until turnips are tender.
  6. Drain the turnips well.
  7. Place the drained turnips in a blender or food processor and puree until completely smooth.
