How to Make Pasta With Ricotta Walnut Sauce
- Boil a large pot of salted water. Add pasta and cook according to package directions until al dente.
- While the pasta cooks, prepare the sauce. In a food processor, combine 1 cup ricotta cheese, 1/4 cup plain Greek yogurt, 2 tablespoons margarine, 2 cloves minced garlic, 1/2 cup walnuts, and 1/4 cup grated Parmesan cheese.
- Process until completely smooth, scraping down the sides as needed.
- Stir in 1/4 cup grated Parmesan cheese, 2 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper to taste.
- Once the pasta is cooked, drain it well, reserving about 1/2 cup of pasta water.
- Add the pasta to the sauce and toss to coat. Add a little pasta water if needed to loosen the sauce.
- Garnish with halved cherry tomatoes, steamed broccoli florets (optional), extra Parmesan cheese, and freshly ground black pepper.
- Serve immediately and enjoy!
