How to Make Pasta With Ricotta Walnut Sauce

  1. Boil a large pot of salted water. Add pasta and cook according to package directions until al dente.
  2. While the pasta cooks, prepare the sauce. In a food processor, combine 1 cup ricotta cheese, 1/4 cup plain Greek yogurt, 2 tablespoons margarine, 2 cloves minced garlic, 1/2 cup walnuts, and 1/4 cup grated Parmesan cheese.
  3. Process until completely smooth, scraping down the sides as needed.
  4. Stir in 1/4 cup grated Parmesan cheese, 2 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper to taste.
  5. Once the pasta is cooked, drain it well, reserving about 1/2 cup of pasta water.
  6. Add the pasta to the sauce and toss to coat. Add a little pasta water if needed to loosen the sauce.
  7. Garnish with halved cherry tomatoes, steamed broccoli florets (optional), extra Parmesan cheese, and freshly ground black pepper.
  8. Serve immediately and enjoy!
