How to Make Pecan Bars

  1. Preheat oven to 350°F (175°C).
  2. Prepare crust: Grease a 13x9 inch metal baking pan. Line with foil, extending the foil over the short ends. Lightly grease the foil.
  3. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  4. In a large bowl, cream together 1 cup (2 sticks) unsalted butter, 1 cup granulated sugar, and 1/2 cup shortening until light and fluffy (about 2 minutes).
  5. Gradually beat in the dry ingredients until just combined. Do not overmix.
  6. Press the dough evenly into the prepared pan.
  7. Bake for 25-30 minutes, or until lightly golden brown.
  8. Remove from oven and let cool slightly.
  9. Prepare pecan topping: In a medium saucepan, combine 1/2 cup (1 stick) unsalted butter, 1 cup packed brown sugar, 1/4 cup honey, 1/4 cup granulated sugar, and 1/2 cup heavy cream.
  10. Bring to a boil over medium-high heat, stirring constantly.
  11. Stir in 2 cups pecan halves.
  12. Pour the hot pecan topping evenly over the warm crust.
  13. Return to the oven and bake for another 25 minutes, or until the topping is bubbly and golden brown.
  14. Let cool completely in the pan on a wire rack.
  15. Once completely cool, lift the bars out of the pan using the foil overhang. Carefully peel off the foil.
  16. Cut into 48 bars (4 lengthwise strips, then 12 crosswise cuts per strip).
  17. Store in an airtight container, with wax paper between layers, at room temperature for up to 1 week or in the freezer for up to 3 months.
