How to Make Pizza Tomato Sauce
- Preheat oven to 325°F (160°C).
- Halve approximately 2 pounds of ripe tomatoes and arrange them cut-side up in two baking pans.
- Drizzle tomatoes with 2 tablespoons of olive oil. Season generously with salt and pepper. Sprinkle with 1/2 cup chopped onion, 4 cloves minced garlic, and 2 tablespoons of your favorite dried herbs (Italian mix recommended).
- Bake tomatoes for 1 hour.
- Check the tomatoes after 1 hour. If they seem to be cooking too quickly, reduce the oven temperature to 300°F (150°C).
- After 1 hour at 300°F (150°C), increase oven temperature to 400°F (200°C) and bake for another 30 minutes, or until tomatoes are very soft and slightly caramelized.
- Remove from oven and carefully process tomatoes through a food mill fitted with a medium disc, into a small saucepan.
