How to Make Pork Chops With Crust Of Onions

  1. Preheat oven to 400°F (200°C).
  2. Season pork chops generously with salt and freshly ground black pepper.
  3. Melt 2 1/2 tablespoons of butter in a large oven-safe skillet (cast iron is ideal) over medium-high heat. Brown pork chops for 2-3 minutes per side, until golden brown. Remove chops from skillet and set aside.
  4. Add 1 tablespoon of butter to the skillet. Add 1 large onion, thinly sliced, and sauté for 3-5 minutes, until softened and lightly golden. Add 1 teaspoon of dried tarragon.
  5. Spread 2/3 of the sautéed onions in the bottom of the skillet.
  6. Arrange pork chops on top of the onions, tarragon-side down.
  7. Sprinkle with 1/2 teaspoon of dried thyme.
  8. Top the pork chops with the remaining onions.
  9. In a small bowl, combine 1/2 cup of bread crumbs and 1/4 cup of grated Parmesan cheese.
  10. Pour 1/2 cup of dry white wine into the skillet, scraping up any browned bits from the bottom. Add 1/2 cup of chicken stock and bring to a simmer.
  11. Spread the bread crumb mixture evenly over the onions and pork chops.
  12. Drizzle the remaining 2 tablespoons of melted butter over the bread crumbs.
  13. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pork chops are cooked through and the topping is golden brown and crispy.
  14. Let rest for 5 minutes before serving.
