How to Make Pumpkin Spice Bagels

  1. In your bread machine pan, combine ingredients in the order recommended by your manufacturer: 2/3 cup warm water (105-115°F), 1 cup pumpkin puree, 1/4 cup packed light brown sugar, 1 teaspoon salt, 1 teaspoon pumpkin pie spice, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 3 1/2 cups all-purpose flour, and 2 1/4 teaspoons active dry yeast.
  2. Select the dough setting on your bread machine and let it run through the complete cycle.
  3. Once the cycle is finished, gently turn the dough out onto a lightly floured surface.
  4. Divide the dough into nine equal pieces and shape them into balls.
  5. Using your thumb, create a 1-inch hole in the center of each ball, stretching and shaping the dough to form an even ring.
  6. Cover the bagels and let them rest for 10 minutes.
  7. Gently flatten each bagel ring slightly.
  8. Fill a large Dutch oven two-thirds full with water and bring it to a rolling boil.
  9. Carefully drop bagels into the boiling water, two at a time.
  10. Boil for 45 seconds, then flip and boil for another 45 seconds.
  11. Remove the bagels using a slotted spoon and drain them on paper towels.
  12. In a small bowl, whisk together 1 egg white and 1 tablespoon of water.
  13. Brush the egg wash evenly over the bagels.
  14. Lightly coat a baking sheet with cooking spray and sprinkle with 1 tablespoon of cornmeal.
  15. Arrange the bagels 2 inches apart on the prepared baking sheet.
  16. Bake at 400°F (200°C) for 15-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  17. Transfer the bagels to a wire rack to cool completely before serving.
