How to Make Apple And Date Loaf

  1. Preheat your oven to 180°C (350°F). Grease and flour a 25cm x 11cm loaf tin.
  2. In a medium bowl, combine 200g pitted dates, 1 teaspoon baking soda, 1 x 400g can of sliced apples (drained), 50g crystallised ginger (finely chopped), 1 teaspoon ground ginger, and 150ml boiling water. Stir well and let stand for 10 minutes to allow the dates to soften.
  3. In a separate large bowl, cream together 175g softened butter and 200g granulated sugar until light and fluffy. Beat in 2 large eggs one at a time.
  4. Gradually add the date mixture to the wet ingredients, alternating with 250g sifted all-purpose flour. Mix until just combined. Be careful not to overmix.
  5. Spoon the batter into the prepared loaf tin and spread evenly.
  6. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean. If the top is browning too quickly, cover loosely with foil.
  7. Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Enjoy!
