How to Make Quick Domino Slice
- Preheat oven to 160°C (320°F). Line an 18cm x 28cm slice tin with baking paper.
- Melt 100g of butter in a saucepan over low heat or in the microwave.
- Stir in 150g of caster sugar until completely dissolved.
- Add 2 large eggs and beat well with a whisk or electric mixer.
- In a separate bowl, sift together 75g of plain flour and 50g of cocoa powder. Gently fold this into the wet ingredients along with 50g of desiccated coconut (optional).
- Stir until just combined. Do not overmix.
- Spread the batter evenly into the prepared tin.
- Bake for 30 minutes, or until a skewer inserted into the center comes out clean.
- Let the slice cool completely in the tin before icing.
- Once cool, spread chocolate icing evenly over the top.
- Use a ruler and sharp knife to mark 4cm x 6cm oblongs on the iced slice.
- Carefully cut along the marked lines to create individual domino pieces.
- Decorate with white icing dots or silver sprinkles to complete the domino effect.
