How to Make Quick Domino Slice

  1. Preheat oven to 160°C (320°F). Line an 18cm x 28cm slice tin with baking paper.
  2. Melt 100g of butter in a saucepan over low heat or in the microwave.
  3. Stir in 150g of caster sugar until completely dissolved.
  4. Add 2 large eggs and beat well with a whisk or electric mixer.
  5. In a separate bowl, sift together 75g of plain flour and 50g of cocoa powder. Gently fold this into the wet ingredients along with 50g of desiccated coconut (optional).
  6. Stir until just combined. Do not overmix.
  7. Spread the batter evenly into the prepared tin.

  9. Let the slice cool completely in the tin before icing.
  10. Once cool, spread chocolate icing evenly over the top.
  11. Use a ruler and sharp knife to mark 4cm x 6cm oblongs on the iced slice.
  12. Carefully cut along the marked lines to create individual domino pieces.
  13. Decorate with white icing dots or silver sprinkles to complete the domino effect.
