How to Make Raspberry Rave

  1. Drain 1 cup of fresh raspberries and 1/2 cup of crushed pineapple in a fine-mesh sieve set over a bowl.
  2. Gently press the fruit with a spoon to extract 2 cups of juice. Reserve the solids for another use or garnish.
  3. In a medium bowl, sprinkle 1 packet (1 tablespoon) of unflavored gelatin over 1/2 cup of boiling water. Let it bloom for 2-3 minutes, stirring gently until fully dissolved.
  4. Stir in the 2 cups of raspberry-pineapple juice, the reserved raspberry and pineapple solids, and 1 cup of sour cream until the mixture is smooth and well combined.
  5. Pour the mixture into a serving bowl (approximately 2-quart size). Cover and refrigerate for at least 2 hours, or until completely set.
