How to Make Roast Turkey With Sage And Thyme

  1. Preheat oven to 325°F (160°C).
  2. Remove giblets and neck from turkey and discard or save for gravy.
  3. Rinse turkey inside and out with cold water and pat completely dry with paper towels.
  4. Loosen the skin from the turkey breast, being careful not to tear it completely.
  5. In a small bowl, combine 2 tablespoons softened butter, salt, and pepper.
  6. Rub the butter mixture evenly under the loosened skin of the turkey breast.
  7. Evenly distribute sage leaves and thyme sprigs under the skin of the breast.
  8. Gently replace the turkey skin over the seasoned breast.
  9. Place pear halves, celery, onion, and garlic inside the turkey cavity.
  10. Place the turkey breast-side up on a lightly greased wire rack in a shallow roasting pan lined with aluminum foil (for easy cleanup).
  11. Rub the remaining 2 tablespoons of softened butter all over the outside of the turkey.
  12. Roast for 2 hours and 45 minutes to 3 hours and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 180°F (82°C). Baste the turkey with pan drippings every 30 minutes.
  13. Once cooked, remove the turkey from the oven and let it rest on a cutting board for at least 20 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful turkey.
  14. Garnish and serve. Enjoy your delicious Thanksgiving masterpiece!
