How to Make Southwest Baked Apples With Almond Cream

  1. Preheat oven to 375°F (190°C).
  2. Core 4 medium apples (such as Honeycrisp or Fuji) leaving about 1/2 inch at the bottom intact.
  3. Arrange apples in an 8-inch microwave-safe glass pie plate, leaving 1 inch between each apple.
  4. In a small bowl, combine 1 teaspoon pumpkin pie spice with 1 tablespoon of brown sugar.
  5. Sprinkle half the spice mixture into and over each apple.
  6. Place 1 teaspoon (4g) of butter in the center of each apple.
  7. Place the remaining 1 teaspoon (4g) of butter in the bottom of the pie plate.
  8. Sprinkle the remaining brown sugar mixture in the bottom of the pie plate.
  9. Microwave apples on high for 10-12 minutes, or until tender, turning apples after 5-7 minutes.
  10. Remove from microwave. Spoon the caramelized butter and brown sugar from the bottom of the plate over the apples.
  11. Set aside while preparing the almond cream.
  12. In a small bowl, whisk together 2 tablespoons granulated sugar and 1/2 teaspoon ground cinnamon.
  13. In a medium bowl, beat 1 cup heavy whipping cream with an electric mixer until soft peaks form.
  14. Gradually add the sugar-cinnamon mixture to the whipped cream while beating on low speed.
  15. Continue beating until stiff peaks form.
  16. Stir in 1 teaspoon almond extract.
  17. Top each baked apple generously with the almond cream.
  18. Serve immediately and enjoy!
