How to Make Southwest Chocolate Stack Ups

  1. Preheat oven to 350°F (175°C).
  2. In a small glass bowl, combine 1/2 cup (113g) semi-sweet chocolate chips. Microwave on high for 2 minutes, or until almost melted, stirring after 1 minute. Set aside to cool slightly.
  3. In a medium bowl, beat together 4 ounces (113g) cream cheese, 1/4 cup (50g) granulated sugar, and 1 teaspoon vanilla extract with a mixer at medium speed until well blended.
  4. Add the melted chocolate chips and 1/2 cup (113g) whipped topping (such as Cool Whip) to the cream cheese mixture. Stir until well combined.
  5. Cover and chill the cream cheese mixture in the refrigerator while you prepare the tortilla wedges.
  6. In a small bowl, combine 1/4 cup (30g) ground cinnamon, 1/4 cup (50g) granulated sugar, and 2 tablespoons (10g) unsweetened cocoa powder.
  7. Lightly coat a baking sheet with cooking spray.
  8. Arrange tortilla wedges (about 8-10, 6 inch size) on the prepared baking sheet.
  9. Lightly coat one side of each tortilla wedge with cooking spray.
  10. Sprinkle the cinnamon-sugar-cocoa mixture evenly over the sprayed side of the tortilla wedges.
  11. Bake for 10 minutes, or until lightly golden brown.
  12. Remove from oven and let cool completely on a wire rack.
  13. To assemble the stack ups, spread 1 1/2 tablespoons of the chilled cream cheese mixture onto one tortilla wedge (sugar side up).
  14. Top with another tortilla wedge (sugar side up).
  15. Add 1/4 cup (approximately 3-4) sliced strawberries.
  16. Add another 1 1/2 tablespoons of the cream cheese mixture.
  17. Top with another tortilla wedge (sugar side up).
  18. Add 1 1/2 tablespoons of cream cheese mixture.
  19. Sprinkle 1 1/2 teaspoons of mini chocolate chips over the top.
  20. Drizzle 1 tablespoon of your favorite chocolate syrup or honey over the stack up.
  21. Repeat steps 13-20 with the remaining tortillas, cream cheese mixture, strawberries, mini chocolate chips, and syrup. Assemble just before serving.
