How to Make Southwestern Chicken Lasagna

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine 1 (15 ounce) can black beans (rinsed and drained), 1 (15 ounce) can corn (drained), 1 cup shredded cheddar cheese, 1/2 cup chopped cilantro, and 2 cups shredded rotisserie chicken. Mix well.
  3. Let the chicken mixture stand for 5 minutes to allow flavors to meld.
  4. In a large skillet, saute 1 medium onion (chopped) and 2 cloves garlic (minced) in 2 tablespoons olive oil over medium-high heat for 3-5 minutes, or until tender.
  5. Add 1 (15 ounce) can diced tomatoes and green chiles (undrained), 1 (15 ounce) can chili (any variety), and 1 teaspoon chili powder to the skillet.
  6. Reduce heat to low and simmer for 3-4 minutes, stirring occasionally.
  7. Line the bottom of an 11x7 inch baking dish with 3 (6-inch) flour tortillas.
  8. Layer half of the chili mixture, half of the chicken mixture, and 1/3 of the remaining 2 cups of shredded cheddar cheese over the tortillas.
  9. Repeat layers: remaining chili mixture, remaining chicken mixture, and another 1/3 of the cheese.
  10. Top with the remaining 3 tortillas and sprinkle with the remaining 1/3 of the cheese.
  11. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  12. Let stand for 5 minutes before serving. Garnish with extra cilantro, if desired.
