How to Make Spicy Sun Dried Tomato Sauce

  1. Bring 6 cups of water to a boil in a 3-quart saucepan. Add 1 cup sun-dried tomatoes and simmer for 2-3 minutes. Remove from heat and set aside to rehydrate.
  2. In a separate 3-quart saucepan, sauté 1 medium onion (chopped) in 2 tablespoons olive oil over medium heat for 5-7 minutes until softened. Add 1 cup chopped carrots, 2 cloves garlic (minced), 1 cinnamon stick, 1 tablespoon orange zest, 1/2 teaspoon black pepper, 1/4 teaspoon cayenne pepper, and 1 teaspoon sea salt.
  3. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  4. Drain the rehydrated sun-dried tomatoes and add them to the onion mixture along with 6 cups of fresh water.
  5. Increase heat to high and bring the sauce to a boil.
  6. Reduce heat to low, and simmer uncovered for 10 minutes, stirring occasionally.
  7. Remove the cinnamon stick and orange zest.
  8. Stir in 1/4 cup fresh basil (chopped) and 2 tablespoons balsamic vinegar.
  9. Carefully puree the sauce in batches using an immersion blender or a regular blender until smooth. (Note: Vent the lid if using a regular blender).
  10. Season with additional sea salt to taste.
