How to Make Stove Top Margarita Chicken With Fresh Corn Relish
- In a large zip-top bag, whisk together 1/2 cup lime juice, 1/4 cup tequila, 2 tablespoons olive oil, 1 tablespoon orange liqueur (such as Cointreau or Triple Sec), 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, and salt and pepper to taste.
- Add 1.5 lbs boneless, skinless chicken breasts to the bag. Seal and marinate in the refrigerator overnight (or at least 8 hours).
- When ready to cook, melt 2 tablespoons butter in a large skillet over medium-high heat.
- Remove chicken from marinade, reserving marinade. Add chicken to the skillet and cook for 5-6 minutes per side, until browned.
- Pour 1/2 cup of the reserved marinade into the skillet. Reduce heat to medium, cover, and cook for 15-20 minutes, or until the chicken is cooked through and the juices run clear. Turn chicken halfway through.
- While the chicken cooks, prepare the corn relish (see below).
- Once the chicken is cooked, transfer it to a serving platter.
- Top with the fresh corn relish and garnish with lime wedges.
