How to Make Strawberry Iced Tea Fizz

  1. Hull and slice 1 pound of fresh strawberries. In a medium bowl, gently toss the strawberries with 1/2 cup granulated sugar. Set aside for at least 30 minutes to allow the strawberries to release their juices.
  2. In a large pitcher, pour 4 cups of boiling water over 4 black tea bags. Steep for 5 minutes.
  3. Remove the tea bags and discard.
  4. Allow the tea to cool completely to room temperature. You can speed this up by placing the pitcher in an ice bath.
  5. Add the macerated strawberries and their juices to the cooled tea. Stir in 1 cup of lemonade concentrate. Refrigerate for at least 30 minutes to allow the flavors to meld.
  6. To serve, gently stir in 1 cup of chilled club soda into each glass.
  7. Fill tall glasses with ice cubes.
  8. Ladle the Strawberry Iced Tea Fizz over the ice.
  9. Garnish with fresh strawberry slices and a sprig of mint (optional). Serve immediately with spoons or straws.
