How to Make Sunshine Slush

  1. In a medium saucepan, combine 4 cups of water and 2 cups of sugar. Bring to a boil over medium-high heat.
  2. Boil for 3 minutes, stirring occasionally, until sugar is completely dissolved.
  3. Remove from heat and let cool slightly.
  4. Stir in 1 (12 ounce) can frozen orange juice concentrate and 1 (12 ounce) can frozen lemonade concentrate. Stir until completely dissolved.
  5. In a blender, combine 3 ripe bananas and 1 cup of pineapple juice. Blend until smooth.
  6. Pour the banana-pineapple mixture into the sugar syrup. Stir to combine.
  7. Stir in 1 (46 ounce) can of pineapple juice and 1/2 cup of freshly squeezed lemon juice.
  8. Pour the mixture into a 13x9 inch baking dish. Cover tightly with plastic wrap or aluminum foil.
  9. Freeze for at least 6 hours, or until solid.
  10. Let the slush stand at room temperature for 30 minutes before serving to allow it to soften slightly.
  11. Serve the Sunshine Slush in cups, using equal parts slush and your favorite carbonated beverage (like lemon-lime soda or sparkling water).
