How to Make Sweet Potato Apple Muffins

  1. Preheat oven to 325°C (163°C). Line a 12-cup muffin tin with paper liners.
  2. Pierce 2 medium sweet potatoes (about 500g) several times with a fork. Microwave on high for 8-10 minutes, or until soft. Let cool slightly, then mash thoroughly.
  3. While sweet potatoes are cooking, peel and dice 2 medium apples (about 300g). Cook in a saucepan with 2 tablespoons of water over medium heat until softened and most of the water evaporates (about 5-7 minutes). Mash or process until smooth.
  4. In a large bowl, whisk together 2 cups (250g) all-purpose flour, 2 teaspoons baking soda, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  5. In a separate bowl, whisk together 2 large eggs, 1/2 cup (100g) packed brown sugar, 1 teaspoon vanilla extract, and the mashed apples.
  6. Add the mashed sweet potatoes to the dry ingredients. Gently fold in the wet ingredients until just combined. Do not overmix.
  7. If the batter is too thick, add 2-4 tablespoons of milk until desired consistency is reached.
  8. Fill muffin cups about 2/3 full.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
  11. Enjoy your healthy and delicious muffins!
