How to Make Sweet Potato Pecan Bread Pudding

  1. Preheat oven to 350°F (175°C).
  2. Pierce sweet potatoes with a fork. Place on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork. Do not overcook.
  3. Let cool completely. Peel and dice into 1-1 1/2-inch pieces. You should have about 4 cups.
  4. Reserve 2 cups of diced sweet potatoes. Mash the remaining 2 cups with a potato masher or fork.
  5. In a large bowl, whisk together mashed sweet potatoes, eggs, egg yolks, granulated sugar, brown sugar, salt, milk, cream, cinnamon, ginger, and melted butter.
  6. Gently fold in the cubed bread and reserved diced sweet potatoes. Make sure the bread is evenly moistened.
  7. Pour mixture into a greased 11x9 inch baking dish.
  8. Cover with foil.
