How to Make Sweet Potato Pecan Bread Pudding
- Preheat oven to 350°F (175°C).
- Pierce sweet potatoes with a fork. Place on a baking sheet and roast for 45-60 minutes, or until tender when pierced with a fork. Do not overcook.
- Let cool completely. Peel and dice into 1-1 1/2-inch pieces. You should have about 4 cups.
- Reserve 2 cups of diced sweet potatoes. Mash the remaining 2 cups with a potato masher or fork.
