How to Make Aragonese Potatoes Au Gratin Patatas Gratinadas De Aragon
- Preheat oven to 360°F (180°C).
- Peel and thinly slice 2 lbs (900g) potatoes.
- Peel and thinly slice 1 medium onion.
- Cut 4 slices bacon lengthwise into strips and lightly fry until crispy. Remove and drain on paper towels.
- Lightly oil a 9x12 inch glass baking dish.
- Layer half of the potatoes in the baking dish. Top with half of the sliced onions and half of the bacon strips.
- Repeat layers with remaining potatoes, onions, and bacon.
- In a bowl, whisk together 4 large eggs and 1 cup (240ml) milk.
- Pour the egg mixture evenly over the potato layers.
- Cover the baking dish with aluminum foil.
- Bake for 60 minutes.
- Remove foil, sprinkle with 1 cup (100g) grated sheep cheese (or aged Monterey Jack), and bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
