How to Make The Best Banoffee Pie You Ll Ever Make

  1. Blitz 250g digestive biscuits to fine breadcrumbs using a food processor.
  2. Add 1 tsp mixed spice and 100g melted unsalted butter to the breadcrumbs. Mix until well combined.
  3. Press the mixture firmly into a 23cm loose-bottomed cake tin lined with baking parchment. Chill in the refrigerator for at least 30 minutes.
  4. In a non-stick saucepan, combine 100g unsalted butter, 100g light brown soft sugar, and 100g granulated sugar. Melt over medium heat, stirring until a smooth liquid forms.
  5. Stir in 397g can of sweetened condensed milk. Bring to a gentle boil, stirring continuously.
  6. Boil steadily for exactly 1 minute, stirring frequently, until the caramel turns a rich golden colour.
  7. Remove from heat and stir in 2 tbsp golden syrup (treacle). Mix thoroughly.
  8. Pour the caramel evenly over the chilled biscuit base. Refrigerate for at least 1 hour, or until completely firm.
  9. Arrange 3-4 ripe bananas, sliced lengthwise, over the set caramel.
  10. Top with 500ml of freshly whipped double cream.
  11. Dust with cocoa powder or chocolate curls for a beautiful finishing touch.
