How to Make Ugandan Matoke

  1. Peel the plantains, cut them into 1-inch cubes, and sprinkle with lemon juice. Set aside.
  2. Heat the oil in a large pan or pot over medium heat.
  3. Add the onion, tomatoes, green pepper, hot pepper, and garlic to the pan. Sauté for 5-7 minutes, until softened.
  4. Stir in the cumin, turmeric, cayenne pepper, salt, and pepper. Cook for 1 minute more.
  5. Add the cubed meat (or broth) to the pan. If using meat, continue frying and stirring until it's almost cooked through (about 10-15 minutes). If using broth, bring it to a simmer.
  6. Reduce the heat to low.
  7. Add the plantains to the pan. If using plantain leaves, carefully layer some plantain leaves in the bottom of the pot and place the plantain mixture on top. Then, layer with more plantain leaves on top.
  8. Cover the pan and simmer for 45-60 minutes, or until the plantains are very tender and the meat (if using) is cooked through. Stir occasionally to prevent sticking. If using the leaves, the plantains will be steamed.
  9. Remove from heat and let stand for 5-10 minutes before serving.
  10. Serve the matoke hot. Garnish with extra hot pepper or a dollop of plain yogurt, if desired.
