How to Make Vanilla Brownies

  1. Preheat oven to 350°F (175°C).
  2. Line a 13x9x2 inch rectangular pan with foil, leaving an overhang on the sides for easy removal, or grease and flour the pan thoroughly.
  3. In a medium saucepan, melt 1 cup (2 sticks) of unsalted margarine over low heat. Add 2 cups of vanilla chips and stir frequently until completely melted and smooth.
  4. Remove from heat and let the mixture cool slightly to lukewarm (about 10-15 minutes).
  5. In a large bowl, whisk together 2 large eggs and 1 cup of granulated sugar until light and fluffy.
  6. Add 1 teaspoon of vanilla extract to the egg mixture and whisk to combine.
  7. In a separate bowl, whisk together 1 cup all-purpose flour, ½ cup unsweetened cocoa powder, and ½ teaspoon of baking powder.
  8. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  9. Gently fold in the cooled melted vanilla chips and margarine mixture.
  10. Pour the batter into the prepared pan and spread evenly.
  11. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (it shouldn't be completely clean).
  12. Let the brownies cool completely in the pan before frosting.
  13. Prepare the vanilla glaze (see glaze recipe below).
  14. Once the brownies are completely cool, spread the vanilla glaze evenly over the top.
  15. Slice and serve. Enjoy!
