Ingredients for Anna S Granola Cookies

  • 1 cup (2 sticks) softened margarine
  • Light Brown Sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Whole Wheat Flour
  • Unbleached White Flour
  • 1 teaspoon baking soda
  • Granola Cereal
  • Dried Apricot
  • Sunflower Seeds

How to Make Anna S Granola Cookies

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, cream together 1 cup (2 sticks) softened margarine and ¾ cup packed brown sugar until light and fluffy.
  3. Beat in 1 large egg and 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, ½ cup rolled oats, ½ cup chopped nuts (your choice!), ½ cup granola, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in ½ cup raisins (or other dried fruit), and ½ cup chocolate chips (optional).
  7. Line a baking sheet with parchment paper.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  9. Bake for 15-20 minutes, or until the edges are golden brown and the centers are set. (Baking time may vary depending on your oven).
  10. Let the cookies cool on the baking sheet for 1 minute before transferring them to a wire rack to cool completely.
  11. Once cooled, store in an airtight container for up to a week.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
