How to Make Vegemite Damper

  1. Preheat oven to 220°C (425°F).
  2. Sift 500g self-raising flour, 1 tsp salt, 2 tsp baking powder, and ½ tsp bicarbonate of soda into a large bowl.
  3. Add 2 tbsp sugar and mix well.
  4. In a separate saucepan, gently heat 250ml milk over low heat. Stir in 2 tbsp Vegemite until completely dissolved. Alternatively, microwave for 30 seconds and stir until dissolved.
  5. Gradually add the Vegemite milk mixture and 330ml beer to the dry ingredients, mixing with a fork until a soft, slightly sticky dough forms.
  6. Turn the dough out onto a lightly floured surface. Gently shape into a round loaf.
  7. Place the dough on a greased baking tray. Lightly brush the top with water and sprinkle with 50g grated cheese (optional).
  8. Using a sharp knife, score 6 deep (1cm) lines across the top of the damper.
  9. Bake for 25-30 minutes, or until golden brown and the damper sounds hollow when tapped on the bottom.
