  • 200g pitted dates
  • 100ml water
  • Bicarbonate Of Soda
  • Milk Chocolate
  • 200g softened butter
  • Brown Sugar
  • 50ml maple syrup
  • 4 large eggs
  • Self Raising Flour
  • 150g chopped walnuts

How to Make Milk Chocolate Date And Walnut Loaf

  1. Place 200g pitted dates and 100ml water in a saucepan over low heat.
  2. Cook for 5-10 minutes, stirring occasionally, or until the liquid is absorbed and the dates are softened.
  3. Remove from heat and stir in 1 tsp baking soda. Allow to cool completely.
  4. Preheat oven to 180°C (160°C fan/Gas Mark 4). Grease and line a 10cm x 21cm x 7cm loaf pan.
  5. Melt 200g milk chocolate in a heatproof bowl set over a pan of simmering water, stirring frequently with a metal spoon for 5 minutes, or until smooth and melted. Remove from heat and let cool slightly.
  6. In a large bowl, cream together 200g softened butter, 200g granulated sugar, and 50ml maple syrup until light and fluffy.
  7. Add 4 large eggs one at a time, beating well after each addition.
  8. Gently stir in the cooled melted chocolate.
  9. In a separate bowl, sift 250g all-purpose flour. Gradually add to the chocolate mixture, folding gently until just combined.
  10. Fold in the cooled date mixture and 150g chopped walnuts.
  11. Spoon the batter into the prepared loaf pan and spread evenly.
  12. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  13. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
