How to Make White Bean Sauce With Pasta

  1. Cook 1 pound pasta according to package directions until al dente. Reserve about 1/2 cup pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium heat. Add 1/2 teaspoon red pepper flakes and cook for 1 minute, until fragrant.
  3. Add 1 medium onion (chopped), 1 red bell pepper (chopped), 2 celery stalks (chopped), and 2 cloves garlic (minced). Cook until softened, about 5-7 minutes.
  4. Increase heat to medium-high. Stir in 1 (28 ounce) can crushed tomatoes, 2 (15 ounce) cans cannellini beans (rinsed and drained), and 1/2 teaspoon black pepper.
  5. Add 1/2 cup bean liquid or vegetable stock and 1/4 cup chopped fresh parsley. Bring to a simmer and cook until slightly thickened, about 5 minutes.
  6. Carefully transfer half of the bean mixture to a blender or food processor. Blend until completely smooth.
  7. Return the blended mixture to the skillet with the remaining bean mixture. Stir to combine and heat through for about 5 minutes, until thickened to your desired consistency. Add a little pasta water if needed to adjust consistency.
  8. Add the cooked pasta to the skillet and toss to coat with the sauce.
  9. Serve immediately, topped with 1/2 cup grated Parmesan cheese (or your favorite cheese).
  10. Garnish with extra parsley and serve with garlic bread and a tossed salad.
