How to Make Whole Wheat Pretzels

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in olive oil, salt, and 2 cups of whole wheat flour. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, adding the remaining flour as needed, until the dough is smooth and elastic.
  4. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
  6. Punch down the dough and divide it into 8 equal pieces. Roll each piece into a 24-inch rope.
  7. Shape each rope into a pretzel. (Traditional pretzel shape or any creative shape you prefer!)
  8. In a large saucepan, bring 4 quarts of water and 1/2 cup of baking soda to a boil.
  9. Carefully place pretzels into the boiling water for 30 seconds per side.
  10. Remove pretzels with a slotted spoon and place them on the prepared baking sheet.
  11. Sprinkle with coarse sea salt (optional).
  12. Bake for 12-15 minutes, or until golden brown.
  13. Let cool slightly before serving with garlic-horseradish mustard and your favorite beverage.
