How to Make Wonderful Lasagna
- Remove sausage from casings.
- In a large skillet, brown 1 lb Italian sausage and 1 lb ground chuck over medium-high heat with 3-4 tbsp olive oil. Add 1/2 cup chopped green onions and 4 cloves minced garlic. Crumble meat as it cooks.
- Drain excess grease.
- Stir in 28 oz can crushed tomatoes, 6 oz can tomato paste, 1/4 tsp dried oregano, 1/4 tsp dried basil, 1 tsp salt, and 1/2 tsp black pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
- Cover and refrigerate for 8 hours.
- While the sauce chills, prepare the cheese mixture: In a medium bowl, combine 16 oz Monterey Jack cheese (shredded), 15 oz ricotta cheese, 15 oz cottage cheese, 1/2 cup minced green onions, 1/4 cup chopped fresh parsley, 1 large egg (beaten), 1/4 tsp dried basil, and 1/4 tsp dried oregano. Stir well.
- Cook 4 slices bacon until crisp. Crumble and set aside.
- In a separate bowl, combine the crumbled bacon, 10 oz fresh spinach (chopped), 1/2 cup grated Parmesan cheese, 1/2 cup breadcrumbs, 1 egg yolk, and optionally 2 tbsp olive oil.
- Preheat oven to 350°F (175°C). Lightly grease a 13x9x2 inch baking dish.
- Layer half the meat sauce in the baking dish, followed by half the ricotta mixture, then half the spinach mixture. Top with a layer of lasagna noodles.
- Repeat layers: meat sauce, ricotta mixture, spinach mixture, and noodles.
- Sprinkle 1 cup shredded Monterey Jack cheese evenly over the top.
- Arrange slices of Swiss cheese over the Monterey Jack.
- Bake for 40-45 minutes, or until the cheese is melted and bubbly.
- Let stand for 10-15 minutes before serving. Enjoy!
