- 400ml Coconut Milk
- 300g cooked Chicken (from fillets)
- Fresh Basil Leaves (for garnish, optional)
- 1 stalk Fresh Lemongrass, bruised (for soup base)
- 1 cup Bean Sprouts
- 1/2 cup Fresh Cilantro Leaves, chopped
- 2 Spring Onions, thinly sliced (for garnish)

- Cook the laksa noodles according to package directions. Drain and set aside.
- In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the lemongrass and kaffir lime leaves and sauté for 1 minute until fragrant.
- Add the laksa paste and chilli and cook for another minute, stirring constantly.
- Stir in the coconut milk, chicken or vegetable stock, fish sauce, tamarind paste, and palm sugar. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
- Stir in the lime juice. Season with salt to taste.
- Add the cooked chicken or shrimp (if using) to the sauce and heat through.
- Divide the cooked noodles among bowls. Ladle the laksa sauce over the noodles.
- Top with bean sprouts, cilantro, and serve immediately.
