- Preheat oven to 325°F (160°C).
- Grease a shallow 9x13 inch casserole dish.
- In a medium bowl, combine 1 (4 ounce) can diced green chiles, undrained, 1 cup shredded cheddar cheese, and 1/2 cup shredded Monterey Jack cheese. Pour into the prepared casserole dish.
- In a small bowl, whisk together 1/2 cup milk, 2 large egg yolks, 2 tablespoons all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- In a clean, dry bowl, beat 4 large egg whites with an electric mixer until stiff peaks form.
- Gently fold the egg whites into the yolk mixture until just combined. Do not overmix.
- Pour the egg mixture evenly over the cheese and chile mixture in the casserole dish. Gently blend.
