Cómo preparar Advance Planning Turkey Gravy

  1. Preheat oven to 400°F (200°C).
  2. Arrange 2 lbs turkey wings in a single layer in a large roasting pan.
  3. Roast until wings are deeply browned and crispy, approximately 1 hour and 15 minutes.
  4. Transfer the roasted wings to a 5- to 6-quart pot. Add 2 large carrots (chopped), 2 celery stalks (chopped), 1 medium yellow onion (chopped), and 6 cups of chicken broth.
  5. Refrigerate the remaining 2 cups of chicken broth separately.
  6. Deglaze the roasting pan with 1 cup of hot water, scraping and stirring vigorously to dissolve all cooked-on bits.
  7. Add the deglazed pan juices to the pot with the wings and vegetables. Add 2 sprigs fresh thyme.
  8. Bring the mixture to a boil, then reduce heat to low, and simmer uncovered for 1 hour and 30 minutes.
  9. Remove the wings to a cutting board; remove the skin and bones, reserving the meat for another use (e.g., salads, sandwiches).
  10. Strain the broth through a fine-mesh sieve into a 3-quart saucepan, pressing on the vegetables to extract maximum flavor.
  11. Discard the solids (vegetables).
  12. Skim off any excess fat from the surface of the broth and discard.
  13. Bring the broth to a gentle boil.
  14. In a separate bowl, whisk together 1/4 cup all-purpose flour with the 2 cups of chilled chicken broth until completely smooth and lump-free.
  15. Whisk the flour mixture into the boiling broth, stirring constantly.
  16. Bring the gravy back to a boil, and cook, stirring constantly, until thickened (approximately 3-4 minutes).
  17. Remove from heat and stir in 2 tablespoons of butter and 1/4 teaspoon black pepper.
  18. Taste and add salt to preference.
  19. Serve immediately or freeze for up to 6 months. Thaw overnight in the refrigerator before reheating.
