  5. Stir in 2 cloves garlic, minced, 1/2 teaspoon Cajun seasoning, and 1 cup long-grain white rice.
  6. Sauté for 3 minutes.
  7. Stir in 4 cups chicken broth, 1 (15-ounce) can red beans (drained and rinsed), 1 (14.5-ounce) can diced tomatoes (undrained), and the remaining 1 1/2 teaspoons Cajun seasoning.
  8. Bring to a boil.
  9. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender.
  10. Remove from heat. Stir in the cooked sausage and 1/4 cup chopped fresh parsley.
  11. Let stand, covered, for 10 minutes (stand time is not included in cook time).
