  5. Stir in the remaining 2/3 cup white vinegar, 3 cups water, 1 cup packed light brown sugar, 1 teaspoon salt, and 1/4 teaspoon cayenne pepper (or more, to taste).
  6. Bring the mixture to a boil over medium-high heat, stirring frequently.
  7. Reduce heat to low, and simmer uncovered, stirring occasionally, for 1 hour. If the ketchup sticks to the bottom, add up to 1 cup more water, a little at a time.
  8. Add 1/4 cup light corn syrup, 1 teaspoon ground allspice, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon black pepper, and 1/4 teaspoon ground cloves.
  9. Continue to cook over medium-low heat, stirring frequently, for 15 minutes, or until thickened enough to coat the back of a spoon.
  10. Remove from heat and stir in 2 tablespoons dark rum (optional).
  11. Let cool slightly.
  12. Force the ketchup through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible.
  13. Let the ketchup cool completely to room temperature.
  14. Store in an airtight container in the refrigerator for up to 1 month.
