- Preheat oven to 400°F (200°C).
- Peel and thinly slice 2 pounds of Yukon Gold potatoes.
- Thinly slice 1 large yellow onion (about 1 pound).
- In a large bowl, toss the potatoes and onions with 2 tablespoons of olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- In a buttered 13x9 inch baking dish, layer 1/3 of the potato and onion mixture.
- Dot with 1/3 of 4 tablespoons of butter, cut into small pieces.
- Repeat layers two more times.
- Cover the baking dish with foil.
- Bake for 45 minutes, or until potatoes are tender.
- Remove foil and bake for an additional 15-20 minutes, or until the top is lightly browned and the edges are crispy.
- Remove from oven and let cool for 5 minutes.
- Carefully loosen the pie around the edges using a spatula.
- Invert the pie onto a heatproof platter.
- Sprinkle 1/2 cup of shredded cheddar cheese and 1/4 teaspoon of cayenne pepper over the top.
