  1. Slice 250g beef thinly against the grain.
  2. In a bowl, combine the sliced beef with 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp dark soy sauce, 1 tsp sugar, 1 tsp sesame oil, and ½ tsp ground white pepper.
  3. Marinate the beef for 20 minutes.
  4. Add 1 tbsp sesame oil and 1 tbsp canola oil to the marinated beef.
  5. Heat 1 1/2 tbsp canola oil in a wok over medium-high heat. Add 2 stalks chopped chives and 100g bean sprouts; stir-fry until slightly wilted. Set aside.

  7. Add 200g rice noodles to the wok and stir-fry for about 4 minutes until lightly browned. Set aside.
  8. Add remaining 1 tbsp canola oil to the wok. Add the marinated beef and 1 thumb-sized piece of sliced ginger; stir-fry until the beef changes color.
  9. Add the cooked rice noodles, bean sprouts, and chives back to the wok. Stir-fry until everything is well combined and heated through.
  10. Serve immediately and garnish with extra chopped chives (optional).
