How to Make 100 Whole Grain Wheat Bread
- In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- Add the oil, salt, and honey to the yeast mixture. Stir to combine.
- Gradually add the whole wheat flour, one cup at a time, mixing until a shaggy dough forms. (You will likely use between 6 1/2 and 7 cups total).
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic. If using a stand mixer, knead with the dough hook attachment for 5-7 minutes on medium-low speed.
- Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
