How to Make A True Texan S King Ranch Chicken

  1. Preheat oven to 350°F (175°C).
  2. Cook chicken breasts until fully cooked. Shred chicken and set aside.
  3. In a large skillet, sauté the onion and green pepper in 2 tablespoons of butter until softened. Add the garlic and cook for another minute.
  4. Stir in the cream of mushroom soup, cream of chicken soup, diced tomatoes (undrained), Rotel (undrained), and taco seasoning. Bring to a simmer.
  5. Add the shredded chicken, corn, black beans, and half of the cheese (1 cup). Stir to combine.
  6. Pour the chicken mixture into a greased 9x13 inch baking dish.
  7. Layer half of the tortilla chips over the chicken mixture.
  8. Top with the remaining cheese (1 cup).
  9. Layer the remaining tortilla chips on top of the cheese.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
