  • 1 medium acorn squash
  • Granny Smith Apples
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 teaspoons honey

How to Make Acorn Squash And Apple Mash

  1. Preheat oven to 350°F (175°C).
  2. Cut one medium acorn squash in half lengthwise and remove seeds.
  3. Place acorn squash halves, cut-side up, in a baking dish.
  4. Place 1 medium apple, peeled, cored, and chopped into 1/2 inch pieces into the cavity of each squash half.
  5. Sprinkle each squash half with 1 tablespoon brown sugar and 1 teaspoon honey.
  6. Dot 1 tablespoon of butter on top of each squash half.
  7. Cover the baking dish with aluminum foil.
  8. Bake for 35-40 minutes, or until the squash is easily pierced with a fork.
  9. Remove from oven and let cool slightly.
  10. Scoop the cooked squash and apple mixture into a bowl.
  11. Mash with a potato masher or fork until smooth.
  12. Serve warm. Freezes well for future meals!
